The Making

Before it is a snack, the makhana is a seed resting on the floor of a still Mithila pond, hidden under water that nobody is watching.
A harvester wades in waist deep and lifts each pod by hand. There is a right moment to pull it and a wrong one, only years on the water teach the difference.
The pods rest in open air for days until the moisture leaves on its own terms. No kiln, no shortcut, only sun, wind and patience doing the work.
Small batches, open heat, until each seed bursts with a sound Bihar's roasters have trusted for generations. That sound is the only quality check that has never failed them.
What comes out is not a factory product. It is a seed that survived water, sun and fire to become something light enough to hold in one hand and dense enough to matter.
The Grading Bench
